Here's how to do it:

Select Edit from the menu bar.
Select Preferences, then Accessibility from the drop-down menu.
Select 'Use High Contrast Colors' from the drop-down menu.
You can choose from four possibilities, one of which is 'white writing on black.'
Make the necessary adjustments. Every new PDF document will now be opened in a color scheme that you specify.
