I can cut an avocado that looks perfectly green, then find the exposed surface turning brown before I’m ready to eat the rest. Is the speed mostly about how ripe the fruit is, or do things like the knife, air exposure, and storage temperature make a noticeable difference?
I’ve heard several storage tricks, but I’m interested in what actually slows the discoloration without changing the taste or texture.
