Does an 80% Charging Limit Help if My Phone Stays Plugged In All Day?

My phone spends most of the working day connected to power because I use it for calls and as a hotspot. It has an 80% charging limit, but I cannot tell what happens after it reaches that level.

Does the phone run directly from the charger, or does the battery repeatedly discharge a little and top up? Is that behaviour the same as bypass charging, or does it depend on the phone model?

I am mainly concerned about long-term battery wear. Would keeping it plugged in at 80% be preferable to unplugging it and charging again later, especially when the phone gets warm during hotspot use? What should I look for in the manufacturer’s documentation to make that comparison?
