Why do Mars missions have to wait for a particular launch window?

I’ve noticed that Mars missions tend to launch during specific periods rather than whenever a spacecraft is ready. Is that mainly about saving fuel, or are there other constraints that make those dates especially useful?

I’d also like to understand what happens if a mission misses its planned window. Does the next reasonable opportunity arrive a few weeks later, or does the wait usually stretch much longer?
