# Why Do Tomatoes Lose Flavor in the Refrigerator?

Tomatoes from the fridge often taste dull compared with ones left on the counter, even when they look perfectly ripe. Is that mostly a texture change, or does cold storage affect the compounds responsible for their flavor too?

I’m also curious whether the advice changes for a very ripe tomato that needs to last another day or two. What’s the best way to store **tomatoes in the fridge** without sacrificing more flavor than necessary?
