# Why Do Refrigerated Tomatoes Sometimes Taste Less Flavorful?

Tomatoes from the fridge often seem blander and less fragrant than the same kind left on the counter. Is that mostly a change in texture, or does chilling actually affect the compounds responsible for their flavor?

I’m also wondering whether taking them out well before eating makes a noticeable difference, or if the flavor change from refrigeration lasts longer.
