# Why Do Potatoes Turn Green in Storage Before They’re Cut?

I’ve had potatoes develop green patches while they were still whole in the pantry. They weren’t bruised or cut, so I’m wondering what causes the colour change and whether it means the whole potato should be thrown away.

Does the amount of green matter, and what kind of storage conditions help prevent it? I’m looking for practical guidance for keeping potatoes at home, not advice for commercial storage.
