# Why Do Potatoes Taste Sweeter After Being Stored in the Refrigerator?

I left a bag of potatoes in the refrigerator for a couple of weeks and noticed that some tasted sweeter than usual after cooking. I’ve also heard that chilled potatoes can brown differently, but I don’t know whether those changes have the same cause.

What happens to potatoes during cold storage, and does the variety or cooking method affect how noticeable the change is? I’m curious about the difference between **cold-stored potatoes** and potatoes kept in a cool cupboard.
