A License can be thought of as authorization for accessing a number of features according to the definition of the type of license. Salesforce licenses provide the most features (and cost the most), while Customer, Portal, and High Volume licenses provide features, and cost less. For example, some licenses cannot use all objects in an organization like Leads for Customer license types.
WHEREAS

Edition is defined with the features that the entire organization has access to, which is further restricted by license. These features are not license specific and transcend the concept of a license. Examples include Workflow Automation, Sandboxes, limits on custom fields and objects, and so on.
Generally, if it is a feature that can be turned on or off according to the type of user, it is a license permission, while if it is a feature that affects an entire organization, it is part of a given edition.
